Chef Amiee D’maris discovered her passion for cooking at just 17, beginning her journey as a prep cook in a summer camp kitchen. By 20, her exceptional talent and leadership skills earned her the role of Lead Cook at a prominent California Sierra Nevada summer camp, and then going on to become the Culinary Director.

Her early years were a blend of honing her culinary expertise in San Francisco’s vibrant restaurant and catering scene and nurturing her creative soul in England, studying poetry under an acclaimed poet in the English countryside. This love for storytelling deeply influences Amiee's culinary artistry, where every dish tells a tale of flavor, finesse, and passion.

Returning to California, Amiee built a thriving catering business rooted in her belief in the power of storytelling through food. With over 20 years of experience, she specializes in crafting bespoke menus using locally sourced, organic, and high-quality ingredients. Her offerings cater to intimate gatherings, wine-tasting dinners, upscale cocktail parties, anniversary celebrations, and small weddings, all designed to create unforgettable culinary moments & guest experiences.

Amiee’s expertise extends beyond the kitchen, with a background in event design and management that has seen her lead culinary teams for exclusive dining experiences. Her signature style integrates visual accents, elevated taste, and a touch of theater, using all of the bounty of edible beauty California has to offer. Born in Arizona and rooted in California, Chef Cassandra Einolander embodies the soul of the West Coast in every dish she creates. A semi-nomadic chef and artist, her culinary style is deeply inspired by the rugged beauty of California’s wilderness, the wisdom of unique companions, and the transformative power of her adventures.

Cassie’s approach to food is as thoughtful as it is creative. She meticulously shepherds each ingredient from its source to the plate, embracing sustainability, seasonality, and wild foraging whenever possible. Her plates are not just meals—they are edible art, where visually stunning presentations meet bold, complex flavors that linger long after the last bite.

Her intimate connection with ingredients allows her to coax out their natural potential, blending her innate artistry with a passionate curiosity. Cassie’s philosophy is rooted in a harmonious dance between nature’s bounty and culinary innovation, resulting in creations that speak to both heart and palate.

Cassie honed her craft in the esteemed kitchens of Santa Ynez Valley, where she apprenticed under world-class chefs in wineries and fine dining establishments. In 2016, her journey brought her to Napa Valley, where she rose to prominence as Executive Sous Chef before taking the helm as Executive Chef for Amiee D’maris Events.

There, she orchestrated hundreds of unforgettable wine country events and weddings, cementing her reputation as a culinary force in California’s food scene.

Today, we are fortunate to have her as one of our chef partners. Chef Cassandra is a sought-after talent on the retreat and pop-up circuit, crafting immersive dining experiences across the West Coast. From intimate weddings to bespoke cooking classes, she combines her love of travel, collaboration, and adventure to create unforgettable gatherings. A key figure in Chefs Who Collaborate, Cassie continues to innovate, hosting breathtaking culinary pop-ups in wild and remote locales, where the spirit of exploration meets the art of cuisine.

Peter emerged as a chef during the groundbreaking era of California Cuisine, drawing inspiration from trailblazing mentors like Mark Miller of 4th Street Grill and Chef Aki of Aki Japanese Restaurant. These formative years instilled in him not only technical excellence but also a profound respect for the vibrant flavors of Southeast Asian and traditional Japanese cuisines—elements that now define his sophisticated culinary voice.
